Those of you regularly surfing on your iPod Touch, Blackberry, Nokia N95, etc will have experience of the provided browser or third party browser. How does it perform, what problems do you experience, what are its good features, etc?

Yes Gazza - MobileSafari. It works really well on the iPhone. The way they have used multi-touch for zooming is great, but even better is the double-tap on an area of the screen and 95% of the time it intelligently zooms in on just that location.

One difference is that the touch version of Safari doesn't support Flash at all.

Why do you bother having all three browsers if Safari is the "best?" Are there purposes that particular browsers are better at handling, or that others don't cope with at all?

Different devices. I use Opera mobile and the default Nokia one on my N95, Pocket IE on Windows Mobile devices and Safari on my iPod touch.
